Comté, olive and dried fruit cake

Ingredients

  • 225 grams of flour
  • 165 grams of Comté cheese
  • 2 teaspoons of baking powder
  • 4 eggs
  • 150 ml of dry white wine
  • 50 ml of olive oil
  • 25 ml of milk
  • 170 grams black olives
  • 125 grams of mixed dried fruits: hazelnut, cashew nuts, dried grapes and cranberries
  • Salt, and chilli powder
  1. Preheat the oven to 200°C.
  2. First drain the olives and grate the cheese.
  3. Then mix the flour and baking powder in a bowl then add the dried fruits.
  4. In another bowl, beat the eggs to make an omelette.
  5. Add white wine, olive oil, milk, drained olives, salt, chilli powder and cheese. Mix, and then add the flour blend.
  6. Grease a cake tin and pour the blend in it. Put it in the oven for 50 minutes at 200°C. Lower the temperature to 180°C and let it in the oven for another 20 minutes.
  7. Remove the cake from its tin.
  8. You can eat the cake warm, or cold with a salad.
