Asparagus & Comté Bruschetta

  • 250g asparagus
  • 75g Comté
  • 30g unsalted butter
  • 8 slices of baguette or ciabatta
  • 4 tablespoons of olive oil
  • salt
  • pepper
  • tabasco
  1. Cut the asparagus into slices.
  2. Heat olive oil in a pan and braise the asparagus until glazed. Season the asparagus with salt, pepper and Tabasco and allow to chill.
  3. Grate the Comt&eacute cheese and mix it with the chilled asparagus.
  4. Toast the baguette, sprinkle it with olive oil and top the baguette with the Asparagus & Comt&eacute mixture.
  5. Grill the topped baguette slices under an oven grill for about 3-4 minutes at 160°C until the Comté has melted. Serve while still warm.
