16 month Comté with Truffle honey served on Charcoal crackers

  • Ingredients:
    1 pack of Charcoal Crackers
  • 1 pot of White Truffle Honey
  • 200 grams Aged Comté (14-16 months)
  • 100 grams pack of whole hazelnuts
  • 1 pack of Micro Parsley
  1. Method

    Using a vegetable peeler or knife, thinly slice the comté into strips. Place the slices on top of the crackers. Trim the comté to fit size of cracker if necessary.

  2. In a pan toast hazelnuts, continuously shaking the pan. Toast until hazelnuts are golden and they begin to give off an aroma.
  3. Using a pestle and mortar or blender, roughly crush the hazelnuts into small pieces.
  4. On the plate arrange the comté crackers. Drizzle lightly with truffle honey and sprinkle with the hazelnuts.
  5. To finish, scatter with micro parsley.
