Pit the avocado and cut into cubes. Place the avocado in a bowl and add the lime juice and sugar. Season with salt and pepper, then mash the avocado with a fork to create a paste.
Slice the burger buns and grill for about 4 minutes.
Slice the tomatoes and then the COMTÉ into thin slices. Set both aside.
Season the turkey with salt then fry both sides for about 3-4 minutes.
Assemble the cheeseburger by spreading avocado on the inside of both sides of each bun. Add the turkey and season with pepper. Layer the COMTÉ slices on top and then the tomato. Sprinkle with cress before topping with the bun.
